Create the cream cheese spread by beating the cream cheese on medium-high until smooth and creamy. Add in 2 tbsp sugar and vanilla.
Wash and slice strawberries. Place in a small bowl and stir in cornstarch and the remaining 1/2 tbsp of sugar.
Unfold thawed puff pastry sheet onto lightly floured surface. It should look like a large thin rectangle. If not, roll out dough until 1/4 inch thick. Cut into equal portions, either rectangles or squares. With a fork, poke holes in the centre area of each portion to help the dough not puff up in the centre
Spread a thin layer of the cream cheese mixture on the dough, leaving about 1/4 inch boarder. Place strawberries on top.
In a small bowl, whisk together the egg and water. This will be your egg wash. Brush the edges of the dough with the egg wash.
Bake on a parchment lined baking sheet for 14-16 minutes or until golden brown.
Sprinkle icing sugar over top when danishes are done for a bakery style look.
