Strawberry Cream Cheese Danish

Yield: 8 danishes

Ingredients

  • 1 sheet frozen puff pastry (thawed)
  • Half a brick (4oz) of cream cheese (softened)
  • 2 1/2 tbsp granulated sugar
  • 1/2 tsp vanilla
  • About 1 cup sliced strawberries
  • 1/2 tbsp cornstarch
  • 1 egg
  • 1 tbsp water
  • Flour to dust countertop
  • Optional icing sugar for dusting pastries

Instructions

  1. Preheat oven to 400°.
  2. Create the cream cheese spread by beating the cream cheese on medium-high until smooth and creamy. Add in 2 tbsp sugar and vanilla.
  3. Wash and slice strawberries. Place in a small bowl and stir in cornstarch and the remaining 1/2 tbsp of sugar.
  4. Unfold thawed puff pastry sheet onto lightly floured surface. It should look like a large thin rectangle. If not, roll out dough until 1/4 inch thick. Cut into equal portions, either rectangles or squares. With a fork, poke holes in the centre area of each portion to help the dough not puff up in the centre
  5. Spread a thin layer of the cream cheese mixture on the dough, leaving about 1/4 inch boarder. Place strawberries on top.
  6. In a small bowl, whisk together the egg and water. This will be your egg wash. Brush the edges of the dough with the egg wash.
  7. Bake on a parchment lined baking sheet for 14-16 minutes or until golden brown.
  8. Sprinkle icing sugar over top when danishes are done for a bakery style look.
