Cookies n Cream Cupcakes
Yield: 12 cupcakes
Ingredients
- Cupcakes
- 1 box vanilla cake mix
- Eggs as required by box instructions
- Vegetable oil as required by box instructions
- Milk instead of water as required by box instructions
- 1/2 cup Oreo baking crumbs
Frosting - 1 cup unsalted butter softened
- 4 cups icing sugar
- 2-4 tbsp whole milk
- 2 tsp vanilla
- 1/8 tsp salt
- 1/4 cup Oreo baking crumbs
- 12 Oreos
- 1 Hershey's cookies n cream chocolate bar
Instructions
- Cupcake
- Preheat oven to 350°F and prepare a cupcake pan with liners.
- Make cake mix according to the box instructions. After mixed, stir in Oreo crumbs.
- Fill cupcake liners about 2/3 full with the batter.
- Bake about 18 minutes or until done.
- Allow to cool completely before frosting.
Frosting - Beat butter with an electric hand mixer or in a stand mixer for 5 minutes minimum.
- Beat in vanilla and salt.
- Add in icing sugar, one cup at a time, beating in between. If frosting gets too thick you can add a tablespoon of milk at a time until smooth.
- Beat in Oreo crumbs.
- Frost cupcakes as desired.
- Top cupcakes with an Oreo and a piece of the cookies n cream chocolate.
