Sprinkle Cake

Yield: One 6-inch three layerd cake

Ingredients


  • Cake
  • 1 boxed vanilla cake mix
  • Eggs *check how many needed on the box
  • Vegetable oil *check amount needed on the box
  • Milk *substitute water for milk; check amount needed on the box
  • 1/2 cup sprinkles

    Buttercream
  • 2 cups unsalted butter (softened)
  • 9 cups icing sugar
  • 1/2 cup whole milk
  • 1 tbsp vanilla
  • 1/4 tsp salt
  • 1 1/14 cup sprinkles

Instructions

  1. Preheat oven to 350°.
  2. Prepare cake pans by spraying with cooking spray (Pam) and lining the bottom with parchment paper.
  3. Prepare cake mix according the the box.
  4. Bake cakes according to the time on the box. Mine were in the oven for 20-25 minutes. Check with a toothpick in the centre. If it comes out clean, it is done.

    Buttercream
  5. Beat butter for 5 minutes until lightened in colour and smooth.
  6. Slowly add in icing sugar and milk alternating between the two. Beating in-between until combined.
  7. Mix in vanilla and salt.
  8. Beat for 5 minutes or longer to smooth out.
  9. If your buttercream looks yellow, you can use a VERY small amount of violet colour to counteract the yellow and make the buttercream whiter. Be careful not to use too much and turn it purple. Start with just a dot, mix, and if needed add another dot.
  10. At this point you can either fold the sprinkles into the buttercream or leave them out and put the sprinkles on only the outside of the cake.

    Assembly
  11. Cut the tops of the cakes to level them.
  12. Start by placing a small amount of buttercream on your turntable or workspace to help the cake stay in place. Place the first cake layer here.
  13. Spread an even layer of buttercream over the top. Place second cake layer on top and spread another even layer of buttercream. Place the third cake layer top down. This way the top of the cake is flat.
  14. Continue spreading as much buttercream as desired all over the sides and top of the cake. Smooth out the edges and top with a bench scraper.
  15. If you have buttercream left, you can put it in a piping bag with a 1M tip to do the swirls on the top. Sometimes I skip this step and just add candles to the top.
  16. If you did not put the sprinkles in your buttercream, you can put them on the cake now. I use a small short throw motion to get the sprinkles on the side of the cake.
